
You Can’t Beat Beetroot
Admittedly, this is perhaps an odd choice of subject for a blog post about ice cream but do bear with me.
You really cannot beat beetroot. Hailed as a ‘superfood’ thanks to its high fibre, low fat and high antioxidant properties, the humble Beetroot has been subjected, in recent years to being used in so many different ways. From the utterly bizarre – beetroot and green peppercorn jelly?, thanks, Heston – to the inspired and divine Beetroot and Chocolate cupcakes, featured in the Hummingbird Bakery’s Cake Days book.
In addition to the benefits mentioned above, beetroot has also been shown to decrease blood pressure and for those partial to a bit of physical effort, can even improve performance and recovery. Indeed, our Olympians guzzle the stuff in juice form!
I very much love the time honoured pickled version, It is however, much more versatile. If you’re not keen on its earthy flavour, try it in a sweet dish. A man that knows his vegetables, is Hugh Fearnley Whittingstall. In his hugely successful 2011 Veg book, he has a recipe for Chocolate and beetroot ice cream, which HAS to be tried.
