Homemade Strawberry Cheesecake Ice Cream

This Strawberry Cheesecake Ice Cream is an indulgent treat, thick, creamy and bursting with flavour. It’s a great one to make after a spot of PYO at a farm shop. I know you can get strawberries all year round now but they taste so much better in season. And because you are going to whizz your strawberries into a puree to make your Strawberry Cheesecake Ice Cream it doesn’t matter if they are big ones, small ones or those slightly crazy misshapen ones! If they smell good they’ll be perfect.

If you wanted to carry on the cheesecake theme you could always add some crushed up biscuit crumbs to your ice cream after you’ve finished churning it. Just swirl them through at the end or sprinkle them on top for a little crunch just before you serve your ice cream. Digestives would work well and so would chocolate chip cookies or shortbread.

Strawberry Ice Cream

You need just four ingredients to make this delicious homemade Strawberry Ice Cream. Strawberries, obviously, a lemon, double cream and a little sugar. It takes barely any time to prepare, just a little chopping and churning until you have a super tasty ice cream and a great sense of satisfaction! 

Strawberries shout Summer to me, I know that you can buy them all year round but I don’t think it’s worth it in the Winter. Summer Strawberries taste and smell so much better and picking your own, whether from the garden or a PYO farm is a Summer ritual I love.

I grew up in Kent, where we were surrounded by fields of Strawberries. To earn some money after I’d finished my exams one Summer I remember getting up early, to catch a big red double decker bus with some friends. It took us to Mockbegger Farm where we picked Strawberries for a whole day. Back breaking work and I think I earned something pitiful like £12! My friend earned even less than that because the half Strawberries she picked were rejected for being under ripe and not up to M&S standards!

This would be a great ice cream to make and enjoy whilst watching some of the Wimbledon tennis matches this year. Homemade Strawberry Ice Cream, tennis on the TV, windows wide open, sun streaming in, can’t wait!
