Autumn Plum Ice Cream

There is an abundance of fruit in our local orchard at the moment. We’ve taken full advantage and gathered up some perfectly ripe plums. This recipe for plum ice cream uses greek yoghurt which gives a lovely texture and slight tartness. Its a perfect companion to a hot dessert, such as a fruit crumble or apple pie. Alternatively, indulge on its own!

Method
  1. Heat the plums with a few table spoons of water and the caster sugar. Bring to the boil, then simmer until the skins split and the fruit is soft. Remove from the heat and cool.
  2. Once cool, squish the fruit with a potato masher which will expose the stones, remove them and then pour the plum mixture into a blender. Blend until smooth. Pour the puree into a bowl and chill in the fridge.
  3. Add the cream, yoghurt and vanilla to the plums, mix well and then pour into your ice cream machine. Churn according to manufacturer instructions. Once churned, scoop into a tub and pop into the freezer for a couple of hours before serving.
