This blackcurrant and mint frozen yoghurt is packed with flavour.  Blackcurrant and mint should be used together more often in my books, the two flavours really complement each other.  This is a simple recipe you should be very happy with.  My kids really enjoyed this recipe too.  Enjoy making and eating x

A beautiful blackcurrant and mint frozen yogurt which is very easy to make and tastes delicious.

You can use frozen blackcurrants for this recipe. You don't even need to defrost them, just heat them for a little longer in the pan.

Method
  1. Heat the blackcurrants, granulated sugar and water in a saucepan and simmer until it becomes a nice syrupy consistency.
  2. Strain to remove the seeds. Add a few mint leaves and then cool in the fridge.
  3. Mix the caster sugar into the yoghurt and churn for 20 minutes until nice and creamy.
  4. Ensuring the syrup is cool, swirl it into the frozen yoghurt to make ripples. Freeze to firm up and then attack!
