This Raspberry Sorbet is so good!  It is the most beautiful raspberry sorbet ever! This recipe uses whisked egg whites which makes the end result sublime and extremely smooth.

A classic and everyone's favourite, it's hard to beat a home made raspberry sorbet.

Use fresh or frozen raspberries for this recipe.  If using frozen, simply heat in the pan for a little longer.

Method
  1. Put the sugar and water into a saucepan. Stir on a low heat to dissolve the sugar then boil for 5 minutes. Leave to cool.
  2. Mash the raspberries or whizz in a food processor. Strain to remove the pips.
  3. Mix together the raspberry juice, lemon juice and sugar syrup. Chill until really cool.
  4. Begin to churn your mixture in the ice cream maker. Whilst doing this, whisk your egg whites to stiff peaks.
  5. Add in your egg whites once the raspberry sorbet has started to thicken. Continue to churn until you have a lovely smooth mixture.
