
Chocolate, Marshmallow and Fudge Ice Cream
This Chocolate, Marshmallow and Fudge Ice Cream recipe is really for the kids, although it’s debatable whether those kids are big or small! This is treatsville! We’re talking quadruple chocolate: chocolate chips, cocoa, dark chocolate and milk chocolate. It doesn’t get more indulgent than this ice cream delight. You could try including lots of different ingredients in your recipe such as sweets, different types of chocolate and nuts if you would like.
Recipe Notes
I used semi skimmed milk in this recipe which worked well, but you can use whole milk too. Ensure the custard mixture is very cold before you churn, otherwise you'll be there forever. I chopped up a couple of Cadbury Fudge bars, which made the recipe nice and simple although you could use any fudge you choose. |
- 100 g dark chocolate 50% or above
- 50 g caster sugar
- 3 egg yolks
- 300 ml milk
- 100 ml double cream
- 50 g fudge chopped up in very small pieces
- 1 tbsp Cocoa powder
- 50 g dark chocolate chips
- 25 g mini marshmallows

- To a saucepan, add chocolate pieces, cocoa, cream and milk.
- Heat gently, stirring to melt the chocolate. Once the chocolatey mixture has small bubbles forming around the edges of the pan, remove from the heat.
- Whisk egg yolks and sugar. Add the chocolate mixture to the egg mixture whisking all the time.
- Put everything back in the pan and heat gently for about 15 minutes until the mixture coats the back of a spoon. Stir all the time until the mixture thickens.
- Chill until extremely cold. Once chilled, churn in your ice cream maker for 20 minutes.
- Once you have reached a soft scoop consistency, add the fudge (chopped up really small), marshmallows and chocolate chips.
- Freeze and hide away!
