You can use an espresso from your coffee machine if you have one but if not just make 30ml of very strong instant coffee.  It will still taste really good.

Method
  1. Put milk, cream and coffee into a saucepan. Heat gently until bubbles start to form around the edge of the pan. Remove from the heat.
  2. Whisk egg yolks, sugar and cornflour until well blended.
  3. Pour hot cream mixture over egg mixture whisking all the time.
  4. Return pan to a low heat, stirring frequently until it's thick. Remove from heat, cover with cling film then chill until very cold.
  5. Churn in ice cream maker until lovely and creamy. Meanwhile make a chocolate sauce.
  6. Melt chocolate and water very slowly in a saucepan or Bain Marie. Allow to cool a little then swirl through the coffee ice cream.
