Method
  1. Wash and chop the strawberries into small pieces. Place in a bowl. Sprinkle over the granulated sugar and lemon juice, stir and refrigerate until the juices run out.
  2. Whisk the yoghurt, vanilla extract and caster sugar in a large jug and then add the strawberries and mix.
  3. Pour into your turning ice cream machine and freeze churn for around 20 minutes or until nice and creamy.
  4. Meanwhile, break your meringue nests into coarse chunks. Once the ice cream is ready, stir through the meringue. This icecream is best eaten straight away, but can be kept for later although the strawberries do freeze quite hard, still yummy though, there won't be any complaints from your eaters!
