Method
- Heat the double cream gently with 5 of your mint leaves. Once you see small bubbles around the edge of the pan remove from the heat and allow the mint to infuse. Cool in the fridge.
- Once the cream is very chilled, remove the cooked mint and discard. Whisk together the cream, milk, sugar, vanilla extract and finely chopped mint leaves.
- Pour into your turning ice cream maker and churn for about 20 minutes or until thick and creamy.
- Once thick, stir in the chocolate chips. You can eat now or firm up further in the freezer.
