Fresh Mint Choc Chip Ice Cream
Fresh and minty with great ingredients and no colours.

Heat the double cream gently with 5 of your mint leaves. Once you see small bubbles around the edge of the pan remove from the heat and allow the mint to infuse. Cool in the fridge.
Once the cream is very chilled, remove the cooked mint and discard. Whisk together the cream, milk, sugar, vanilla extract and finely chopped mint leaves.
Pour into your turning ice cream maker and churn for about 20 minutes or until thick and creamy.
Once thick, stir in the chocolate chips. You can eat now or firm up further in the freezer.
