Method
  1. Put the sugar and water into a saucepan. Stir on a low heat to dissolve the sugar then boil for 4 minutes. Leave to cool.
  2. Add the fruits to a pan with 50g of sugar and 10 tbsp water. Cook gently for a few minutes to soften then mash. Strain through a metal seive to remove the pips. Chill well.
  3. Mix together the fruits of the forest juice, creme de cassis and sugar syrup. Chill until really cool.
  4. Begin to churn your mixture in the ice cream maker. Whilst doing this, whisk your egg whites to stiff peaks.
  5. Add in your egg whites once the sorbet has started to thicken. Continue to churn until you have a lovely smooth mixture.
