mango and lime sorbet

Mango and Lime Sorbet

Mango and Lime Sorbet is a super dish to whip up for a dinner party.  All done in advance so no preparations needed when your guests arrive.
You could serve it with Pineapple Carpaccio, gorgeous thin slices of pineapple with mint, honey and chilli.  Why not check out Hemsley and Hemsley’s recipe for this which goes nicely with our sorbet recipe.

Recipe Notes

I used a pack of frozen mango pieces for this recipe.  They work superbly and are already in perfect sized pieces saving me time attacking real live mangoes.   Just defrost the mango before you begin.  Fresh mango is, of course, great when available.

Method
  1. Add water, sugar and lime zest to a saucepan. Stir to dissolve the sugar then boil for 4-5 minutes until syrupy. Cool then chill really well.
  2. In a processor puree the lime juice and mango pieces. Chill in the fridge.
  3. Once everything is really cold, mix together the sugar syrup and the mango mixture.
  4. Turn on your ice cream maker and churn for about 15-20 minutes until it's wonderfully smooth and sorbet like. Pop in the freezer to firm up then enjoy!
