Mango and Lime Sorbet
Mango and Lime Sorbet has a superb smooth texture and the flavour is zingy and wonderful.

  1. Add water, sugar and lime zest to a saucepan. Stir to dissolve the sugar then boil for 4-5 minutes until syrupy. Cool then chill really well.
  2. In a processor puree the lime juice and mango pieces. Chill in the fridge.
  3. Once everything is really cold, mix together the sugar syrup and the mango mixture.
  4. Turn on your ice cream maker and churn for about 15-20 minutes until it’s wonderfully smooth and sorbet like. Pop in the freezer to firm up then enjoy!
Recipe Notes

I used a pack of frozen mango pieces for this recipe.  They work superbly and are already in perfect sized pieces saving me time attacking real live mangoes.   Just defrost the mango before you begin.  Fresh mango is, of course, great when available.
