Add the sugar to a saucepan, along with 125mls of cold water. Bring to the boil, turn heat down and simmer for 3 – 5 minutes (until sugar has disolved and liquid is clear) pour into a jug and chill in the fridge
Wash and hull strawberries. Blend to a pulp and then push through a fine sieve to remove seeds. Chill the strained fruit.
Mix together the chilled strawberry pulp and sugar syrup, add the rosewater. Gently pour in the prosecco and stir gently to fully combine. Be careful as it will be very fizzy!
Pour into a plastic tub, cover and freeze overnight (because of the alcohol content, this will take longer to freeze)
