Method
  1. Put sugar and water into a saucepan. On a low heat, stir to help dissolve the sugar then boil for 5 minutes. Once syrupy, remove from heat and chill until very cold.
  2. Make some mulled wine by heating the wine, spices, clementine peel, lemon peel and juice from the clementines and lemons. Heat gently for about 5 minutes. Remove from the heat and leave to infuse on the side for 10 minutes. Add the port, now chill until very cold.
  3. Mix the sugar syrup with the mulled wine. Remove any peel. Pour into your ice cream maker. Churn for 10 minutes.
  4. Whisk the egg white until stiff. Once the sorbet has started to thicken (after about 10 minutes) add the egg white and continue to churn for a further 10 minutes. Pop into a freezer box and firm up in the freezer. Call friends, enjoy together x
