Passion Fruit Frozen Yoghurt

A refreshing Passion Fruit Frozen Yoghurt made with passion fruit seeds and pulp and sweetened with honey. This is perfect on a hot day and you can make it in next to no time. Along with 4 passion fruits you just need a pot of Greek Yoghurt, a splash of lime juice and honey to sweeten. Tropical fruits, originally from South America, Passion Fruits are good sources of nutrients and antioxidants and are packed with Vitamin C, Vitamin A and fibre. The riper they get the more wrinkled passion fruits become but avoid the ones that are very wrinkled and light for their size as the pulp may have dried up inside and you want nice juicy passion fruits for this recipe.

I’ve been using this Ice Cream maker every week for almost a year now and I am very happy with it. If you’re planning on buying an ice cream machine this is one I’d recommend. It’s easy to use and compact to store. I keep my bowl in the freezer so that it is ready to churn whenever I want to make ice cream or sorbet. It has a wide opening to pour your mixture into and a handy timer which not all other machines in this price range have. It makes a great present for older children and teens who like cooking and this Passion Fruit Ice Cream is a great recipe to start with.

Method
  1. Using a spoon scoop out the pulp and seeds from 4 passion fruit into a bowl.
  2. Add the honey and lime juice and whisk, then add your yoghurt and whisk again.
  3. Pour your mixture into your ice cream machine and churn until thick enough to scoop.
  4. Serve or transfer into a freezeproof container and freeze to enjoy later.
