Method
- In a jug, beat the peanut butter and sugar together with a wooden spoon until smooth.
- Pour in around a third of the cream and beat to combine.
- Whisk in the rest of the cream and add the vanilla extract.
- Churn the mixture in your ice cream maker until firm enough to scoop.
- Spread a generous amount of ice cream onto the flat side of a chocolate chip cookie, pop a second cookie on top of the ice cream and gently squeeze together. Enjoy!
- If you find your ice cream filling is melting as you make more sandwiches you can always pop them back in the freezer to firm them up again before serving.
