Method
  1. In a jug, beat the peanut butter and sugar together with a wooden spoon until smooth.
  2. Pour in around a third of the cream and beat to combine.
  3. Whisk in the rest of the cream and add the vanilla extract.
  4. Churn the mixture in your ice cream maker until firm enough to scoop.
  5. Spread a generous amount of ice cream onto the flat side of a chocolate chip cookie, pop a second cookie on top of the ice cream and gently squeeze together. Enjoy!
  6. If you find your ice cream filling is melting as you make more sandwiches you can always pop them back in the freezer to firm them up again before serving.
