
Roasted Apricots and Vanilla Ice Cream
Roasted apricots are soooo good. How is it possible to improve a fruit that’s already good? Well, roasting fruits is a good way to sweeten them up and make them even more juicy and delicious. Apart from apricots you could also roast plums, bananas, peaches or try nectarines. Serve with our wonderful Vanilla Ice Cream and top with nuts if you like to make a simply sophisticated dessert. Very seasonal and delicious!

- 2 tbsp dark brown soft sugar
- 2 tbsp butter

- Heat the oven to 190c/375f/Gas Mark 5. Halve the apricots and remove stones.
- Place apricots open side up in an oven proof tray, ideally one you can bring to the table too. Sprinkle with sugar and place knobs of butter on top.
- Roast in the oven for 15-20 minutes until the fruit is soft and juicy and the caramel sauce has formed.
- Serve with Vanilla Ice Cream.
