  1. Heat the oven to 190c/375f/Gas Mark 5. Halve the apricots and remove stones.
  2. Place apricots open side up in an oven proof tray, ideally one you can bring to the table too. Sprinkle with sugar and place knobs of butter on top.
  3. Roast in the oven for 15-20 minutes until the fruit is soft and juicy and the caramel sauce has formed.
  4. Serve with Vanilla Ice Cream.
Recipe Notes

 

Use other fruits, when in season, such as peaches or nectarines. ┬áIt’s a good way to make fruit that’s not the sweetest taste really good.
